<p style="text-align: left;"><a href="http://www.thegordon.edu.au/Pages/Home.aspx" target="_blank">The Gordon</a>, Victoria&#8217;s largest regional TAFE, has long been known for its innovative approach to education, so it was fitting that <a href="http://www.thegordon.edu.au/Pages/Home.aspx" target="_blank">The Gordon Culinary School</a> was the first of its kind in Australia to work towards a best-practice sustainability model. Co-funded by <a href="http://www.sustainability.vic.gov.au/www/html/1517-home-page.asp" target="_blank">Sustainability Victoria</a>, the school&#8217;s 12-month<a href="http://www.thegordon.edu.au/News%20and%20Events/Publications/Publications/The%20Gordon%20sustainability%20case%20study%20LOW%20RES.pdf" target="_blank"> case study</a> won the Tertiary Education category at the <a href="http://sustainabilityawards.vic.gov.au/finalists-winners" target="_blank">2012 Premier&#8217;s Sustainability Awards</a>.<br />
‘By embedding sustainability across The Gordon Culinary School, we are creating behaviour change with today’s students who are the up-and-coming industry leaders of tomorrow,’ says Wayne Chrimes, Program Manager Cooking, Hospitality, Tourism and Events, on the school&#8217;s <a href="http://www.thegordon.edu.au/Employers/Pages/Sustainable-Case-Studies.aspx" target="_blank">website</a>. Below, he tells us why eWater Systems was a crucial partner in the case study.</p>
<p><strong><em>eWater Systems: Why did The Gordon choose to utilise an eWater system?</em></strong><br />
Wayne Chrimes: We found out about the uniqueness of eWater when researching sustainability options for our project with Sustainability Victoria.</p>
<p><strong><em>eWS: How does eWater Systems fit with the strategic direction of The Gordon brand?</em></strong><br />
WC: We have used the eWater process in our environmental plan. It assists us in not having to purchase packaged chemicals, have them on hand or disburse them into the environment.</p>
<p><strong><em>eWS: What do you see as the main benefits of eWater Systems compared with packaged chemicals?</em></strong><br />
WC: The impact on our material safety data sheet (MSDS) of having fewer chemicals in stock and the payback in dollar terms on purchase costs.</p>
<p><strong><em>eWS: How do you rate eWater Systems in terms of economy, safety and sustainability?</em></strong><br />
WC: Good. We no longer have big issues with chemical handling as it&#8217;s safe for all users.</p>
<p><strong><em>eWS: What would you say to other organisations who may be considering eWater Systems?</em></strong><br />
WC: Do some analysis on the cost of chemicals. Look at the convenience of not having to worry about having stock of chemicals on hand – for example, not running out of chemicals on a public holiday. Consider the impact of fewer risks to the environment and fewer OHS risks of dermatitis to users of chemicals.</p>

<p>The on-site eWater production plants provide a continual supply of highly effective eWater Cleaner and well proven eWater Sanitiser, with the portability of spray bottles allowing a vast number of applications throughout facilities. Aside from food and kitchens think front of house, public spaces, room and office cleaning &#8211; in fact for most general cleaning and sanitising needs.</p>
<p>So using spray bottles means significant economics and cost savings, and enhanced respect of staff and customer safety, as well as being far kinder to our environment.</p>

<p>Food safety has become and continues to be the number one public concern. Considerable progress to strengthen food safety systems has been achieved in many countries. However, unacceptable rates of food-borne illness still remain and new hazards continue to enter the food supply chain. Contaminations in food and agricultural products may occur in every stage of the food supply chain, from the field to the table, that is production, harvesting, processing, storage and distribution, calling for proper decontamination and insuring food safety at each of these stages using an effective antimicrobial agent.</p>
<p>Several commercial products are available for this purpose, however, most of the available products are seriously hindered by a number of work and environmental safety limitations calling for the development of a new product which is both safe for environment and workers. In this accord, the use of acidic electrolysed water (AEW) which is now gaining popularity in other countries has been introduced.&#8221;</p>

<p>The Epping Campus in Victoria is home to the new Green Skills Centre of Excellence. Custom built in 2010-2011, the centre sets a new standard for training in environmentally sustainable practice. There was no question that eWater Systems would provide the answer for a sustainable product which would meet the  strict hygiene, cleaning and sanitising requirements for NMIT&#8217;s state-of-the-art hospitality training facilities.</p>
<p>eWater systems have been installed at NMIT campuses at Epping and Collingwood, for use in general cleaning and sanitising applications.</p>
<p>&#8220;Having recently opened a facility to teach &#8216;Green Skills&#8217; to trade apprentices, we were particularly interested in environmental alternatives for cleaning and sanitising. We&#8217;ve used the eWater products extensively and are very impressed. <p>Challenger Institute of Technology Hospitality School, at the forefront of the industry, with all the best contemporary teaching skills, is also integrating the use and applications of eWater into the teaching curriculum.</p>
<p>As part of its commitment to best workplace practice, an eWater system has been installed at each Challenger Institute of Technology Hospitality School campus. <p style="text-align: left;">A leading story in <a href="http://www.theage.com.au/national/health/superbug-reports-spark-concern-20130314-2g3ix.html" target="_blank">The Age</a> newspaper reports that Carbapenem-resistant enterobacteriaceae (CRE) a new class of multidrug-resistant bacteria ’superbug’ has contaminated hand-washing sinks in the intensive care unit at Melbourne&#8217;s Dandenong Hospital; 10 patients have fallen ill with the bacteria that have killed people overseas. The hospital has been struggling to contain the multidrug-resistant bacteria since 2009, a report in the Medical Journal of Australia says.</p>
<p style="text-align: left;">It is no news that ‘superbugs’ such as CRE and Methicillin-resistant Staphylococcus aureus (MRSA) are dangerous and the implications can be deadly. Spread by contact &#8211; by touching another person who has it on the skin, or by touching objects that have the bacteria on them – the importance of thorough regular routine cleaning and sanitation of the environment surfaces, shared equipment, AND personal hygiene is critical to the prevention of transmission of microorganisms.</p>
<p style="text-align: left;">Rates of infection in hospitals, especially intensive care units, are rising throughout the world. In U.S. hospitals, MRSA causes more than 60% of staph infections.</p>
<p style="text-align: left;">Whilst well recognised for its sanitising effectiveness in food preparation and food delivery  there are a number of research studies pointing to the potential use of electrolysed water in assisting control infections , including MRSA – as well as other bacteria such as e-ColiMV1184 strain and Legionella pneumophila. The <a href="http://sciencelinks.jp/j-east/article/200515/000020051505A0503588.php" target="_blank">attached abstract</a> highlights that acidic electrolyzed water (AEW) is proven to kill the ‘superbug’ Methicillin Resistant Staphylococcus Aureus (MRSA). <p style="text-align: left;">It can be expected that electrolysed water will become the subject of closer examination in widening search for effective strategies for controlling these ‘superbugs’.</p>
